HOW TO COOK/PREPARE A DELICIOUS AFANG SOUP.
Afang
soup is a popular Nigerian soup that is commonly eaten in the southeastern
region of the country. It is made from a mixture of vegetables and meat or
fish. Here is a recipe for cooking Afang soup:
Ingredients:
1.
500g Afang leaves (dried and pounded)
2.
500g Water leaves (washed and chopped)
3.
Assorted meat (beef, goat meat, chicken,
or fish)
4.
Stockfish and dried fish
5.
Palm oil
6.
Ground crayfish
7.
Pepper and salt to taste
8.
Seasoning cubes
Instructions:
1. Wash
the assorted meat and place them in a pot. Add some water, salt, and seasoning
cubes to the meat and cook until it is tender.
2. Remove
the cooked meat from the pot and set it aside.
3. Add
the stockfish and dried fish to the pot and cook until they are soft.
4. Remove
the stockfish and dried fish from the pot and set them aside.
5. Add
the chopped water leaves to the pot and cook for about 5 minutes.
6. Add
the pounded Afang leaves to the pot and stir thoroughly.
7. Add
the palm oil, crayfish, pepper, salt, and seasoning cubes to the pot and stir
well.
8. Add
the cooked meat, stockfish, and dried fish back to the pot and stir well.
9. Simmer
the soup for about 10-15 minutes until it thickens.
10. Serve the Afang soup with fufu or any
other swallow of your choice.
Note: If you
cannot find Afang leaves, you can substitute it with spinach. Also, ensure that
the water leaves are properly washed to remove dirt and sand.
